4 bone-in, skin-on chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces cremini or button mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 tablespoon fresh parsley, chopped (for garnish)

Prep the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. When the oil is hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes until the skin is golden brown and crispy. Flip the thighs and cook for another 5 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, reduce the heat to medium and add the chopped onion. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
