Ingredients

1 large head of cauliflower, cut into florets

4 cloves of garlic, minced

1/2 cup unsweetened almond milk (or milk of choice)

1/4 cup cream cheese (or vegan alternative)

2 tablespoons olive oil

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper (adjust to taste)

1/4 teaspoon nutmeg

Fresh chives, chopped (for garnish)

Instructions

Steam the Cauliflower: In a large pot, bring water to boil and add the cauliflower florets. Cover and steam for about 10-12 minutes, or until they are fork-tender.

Sauté the Garlic: While the cauliflower is steaming, heat the olive oil in a small skillet over medium heat. Add the minced garlic and sauté for 2-3 minutes, or until fragrant and golden (be careful not to burn it).

Drain and Blend: Once the cauliflower is tender, drain any excess water and transfer it to a food processor. Add the sautéed garlic, almond milk, cream cheese, salt, pepper, and nutmeg.

Mash It Up: Pulse the mixture until it reaches your desired creamy consistency. Scrape down the sides as needed. Taste and adjust seasoning, adding more salt, pepper, or almond milk if desired to reach your preferred creaminess.

Serve: Transfer the creamy garlic cauliflower mash to a serving bowl. Garnish with chopped chives and a drizzle of olive oil for an extra touch.

Enjoy: Serve warm as a hearty side dish to your favorite proteins or as a delicious low-carb base for rich sauces.
