Ingredients
  

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

6 cups fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 cup cream cheese, softened

1 cup feta cheese, crumbled

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

Zest and juice of 1 lemon

1/4 cup pine nuts, toasted (for garnish)

Instructions
 

Cook the Orzo:

    - In a large pot of salted boiling water, add the orzo and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

      Sauté the Spinach:

        - In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
