2 pounds baby potatoes, halved or quartered

1 cup dill pickles, diced (plus additional for garnish)

1 cup mayonnaise

1 cup sour cream

2 tablespoons Dijon mustard

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup celery, diced

1/2 cup red onion, finely chopped

4 hard-boiled eggs, chopped (optional)

1 tablespoon apple cider vinegar (optional)

Cook the Potatoes: Place the halved or quartered baby potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook until tender but firm, about 15-20 minutes. Drain and let cool.
