2 large cucumbers, thinly sliced

1 cup plain Greek yogurt

1 clove garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon fresh lemon juice

1 tablespoon olive oil

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional, for a hint of spice)

1/4 cup red onion, finely diced (optional)

Fresh mint leaves, for garnish

Instructions
 

Prepare the Cucumbers: Place the thinly sliced cucumbers in a colander and sprinkle with salt. Let them drain for about 15-20 minutes to remove excess moisture. This step helps prevent the salad from becoming watery later on.

    Make the Dressing: In a large mixing bowl, combine the Greek yogurt, minced garlic, dill, lemon juice, and olive oil. Whisk them together until well blended and smooth.

      Combine Ingredients: After the cucumbers have drained, gently pat them dry with paper towels to remove any remaining moisture. Add the cucumbers to the yogurt dressing. If using, stir in the diced red onion and season with salt, pepper, and red pepper flakes.

        Mix and Taste: Gently toss everything together until the cucumber slices are well coated in the creamy dressing. Taste and adjust seasoning if needed.

          Chill: Refrigerate the salad for at least 30 minutes to allow the flavors to meld together and the salad to chill. This can also be prepared a few hours in advance for a more developed flavor.

            Serve: Prior to serving, give the salad a gentle stir. Transfer to a serving bowl and garnish with fresh mint leaves for an extra touch of flavor and color.
