Creamy Corn & Bacon Dip

Ingredients
  

2 cups fresh or frozen corn kernels

6 slices of thick-cut bacon, chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1/2 cup mayonnaise

1 tablespoon lime juice

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup chopped fresh chives (for garnish)

Tortilla chips or veggie sticks for serving

Instructions
 

Cook the Bacon: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove with a slotted spoon and drain on paper towels, leaving a small amount of bacon grease in the skillet.

    Sauté the Corn: In the same skillet, add the corn kernels and sauté for about 5-7 minutes until they’re tender and slightly caramelized. Season with salt and pepper to taste. Remove from heat and let cool slightly.

      Prepare the Dip Base: In a large mixing bowl, combine softened cream cheese, sour cream, mayonnaise, lime juice, garlic powder, and smoked paprika. Stir well until smooth and creamy.

        Combine Ingredients: Add in the sautéed corn and crispy bacon. Fold in the shredded cheddar cheese, mixing until everything is well incorporated.
