Creamy Corn & Avocado Salsa

2 cups fresh corn kernels (about 4 ears of corn)

1 ripe avocado, diced

1 small red onion, finely chopped

1 medium jalapeño, seeded and minced

1 cup cherry tomatoes, halved

1/2 cup creamy dressing (such as Greek yogurt or sour cream)

2 tablespoons lime juice (freshly squeezed)

1/4 cup fresh cilantro, chopped

Prep the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn and cook for about 4-5 minutes until tender. Remove and let it cool before cutting the kernels off the cob. If using frozen corn, simply thaw and drain it.
