2 cups corn kernels (fresh, canned, or frozen)

1 cup cream cheese, softened

1/2 cup sour cream

1 cup shredded Monterey Jack cheese

1/4 cup fresh cilantro, chopped

1 small jalapeño pepper, seeded and diced (optional for spice)

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Tortilla chips, for serving

Prepare the Corn: If using fresh corn, grill or sauté the corn kernels in a skillet with a little olive oil until they are slightly charred, about 5-7 minutes. If using canned or frozen, thaw and drain them if necessary.

    Mix the Creamy Base: In a large mixing bowl, combine the softened cream cheese, sour cream, and shredded Monterey Jack cheese. Use a hand mixer or a spatula to blend until smooth and creamy.
