Creamy Chicken Fajita Skillet

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

1/2 teaspoon oregano

Salt and pepper, to taste

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

4 large flour tortillas

Instructions
 

Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken and season with salt, pepper, chili powder, cumin, paprika, and oregano. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and lightly browned. Remove chicken from the skillet and set aside.

    Cook Vegetables: In the same skillet, add the sliced onion and bell peppers. Sauté for about 5-6 minutes until they are tender and slightly caramelized. Stir in the minced garlic and cook for another minute until fragrant.

      Prepare Cream Sauce: Return the chicken to the skillet with the vegetables. Pour in the chicken broth and bring to a simmer. Let it cook for about 2-3 minutes, allowing the flavors to meld. Next, lower the heat and stir in the heavy cream. Allow the mixture to simmer gently for another 3-4 minutes until slightly thickened.

        Add Cheese: Stir in the shredded cheese until melted and creamy. Adjust seasoning with additional salt and pepper to taste.

          Warm Tortillas: While the sauce is simmering, warm the flour tortillas in a dry skillet or microwave until pliable.
