1 cup wild rice blend (un rinsed)

4 cups low-sodium chicken broth

1 lb boneless, skinless chicken breasts

1 medium onion, finely diced

2 cloves garlic, minced

2 medium carrots, diced

2 medium celery stalks, diced

1 cup cremini mushrooms, sliced

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 tablespoons olive oil

2 tablespoons unsalted butter

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Wild Rice: In a medium saucepan, add the wild rice and 3 cups of chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for about 45 minutes or until tender. Once cooked, fluff with a fork and set aside.

    Prepare the Chicken: In a large pot, heat the olive oil and butter over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the pot and sear on both sides until golden brown, about 5-7 minutes per side. Remove the chicken and set aside to cool slightly.

        Add Broth and Chicken: Slice the chicken into bite-sized pieces and return to the pot. Pour in the remaining 1 cup of chicken broth and bring to a gentle simmer. Cook for about 10 minutes, allowing the flavors to meld together.
