2 cups cooked chicken, shredded or diced

3 cups fresh broccoli florets (or frozen, thawed)

1 cup cooked quinoa (or rice)

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup sour cream

1 cup cream of mushroom soup (homemade or canned)

1 cup shredded cheddar cheese (plus extra for topping)

½ cup grated Parmesan cheese

½ cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish or spray it with non-stick cooking spray.

    Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the diced onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Combine Chicken and Broccoli: In the skillet, add the cooked chicken and broccoli florets. Stir in the paprika, Italian seasoning, salt, and pepper. Cook for about 5 minutes until the broccoli is tender and bright green.
