12 oz (340g) pasta (fettuccine or penne work great)

4 strips of bacon, chopped

2 boneless, skinless chicken breasts (about 1 pound), cut into bite-sized pieces

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup spinach, roughly chopped

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Drain and set aside, reserving 1 cup of the pasta water.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon and cook until crispy (about 5-7 minutes). Use a slotted spoon to remove the bacon and set it aside on a paper towel-lined plate. Leave the bacon grease in the skillet.

      Sear the Chicken: In the same skillet with the bacon grease, add the olive oil. Once hot, add the chicken bites, seasoning with salt, pepper, and Italian seasoning. Cook until the chicken is golden brown and cooked through (about 6-8 minutes). Remove the chicken from the skillet and set aside.

        Sauté the Garlic: In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.

          Make the Cream Sauce: Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and combined. If the sauce is too thick, gradually add some reserved pasta water to reach your desired consistency.

            Combine Everything: Add the cooked pasta, chicken, bacon, and chopped spinach to the skillet. Toss everything together gently until the spinach wilts and everything is well coated in the creamy sauce.

              Serve: Adjust the seasoning with additional salt and pepper if needed. Serve hot, garnished with freshly chopped parsley and extra Parmesan cheese if desired.
