12 oz cheese tortellini

8 oz Andouille sausage, sliced

1 cup heavy cream

1 cup chicken broth

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (preferably red or green), diced

2 tsp Cajun seasoning

1 cup diced tomatoes (fresh or canned)

2 tbsp olive oil

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley for garnish

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions (typically 3-5 minutes). Drain and set aside.

    Sauté the Sausage: In a large skillet, heat olive oil over medium heat. Add the sliced Andouille sausage and cook until browned (about 4-5 minutes). Remove the sausage from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add minced garlic and cook for another minute.

        Add the Liquid Ingredients: Pour in the chicken broth and heavy cream, and stir to combine. Add the diced tomatoes and Cajun seasoning, allowing the mixture to simmer for about 5 minutes to thicken slightly.
