8 ounces smoked sausage, sliced (Andouille preferred)

2 tablespoons olive oil

4 cloves garlic, minced

1 bell pepper (red or green), chopped

1 can (14.5 ounces) diced tomatoes (no salt added)

1 cup heavy cream

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for heat level)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta water.

    Sauté the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the sliced sausage and cook until browned and slightly crispy, about 5-6 minutes. Remove the sausage from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are softened, about 3-4 minutes.
