Creamy Cajun Shrimp Pasta

Ingredients
  

12 oz fettuccine or linguine

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, diced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped for garnish

Optional: 1 teaspoon lemon juice

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package directions until al dente. Drain and set aside, reserving ½ cup of pasta water.

    Prepare the Shrimp: In a bowl, toss the shrimp with Cajun seasoning until evenly coated.

      Sauté Vegetables: In a large skillet over medium heat, heat olive oil. Add diced onion and red bell pepper; sauté for 3-4 minutes until softened. Add minced garlic and cook for an additional 30 seconds until aromatic.

        Cook Shrimp: Move the vegetables to the side of the skillet and add the seasoned shrimp. Cook for about 2-3 minutes on each side, until pink and opaque. Remove shrimp from the skillet and set aside.

          Make the Sauce: To the same skillet, add chicken broth. Bring to a simmer, scraping the bottom of the pan to deglaze. Stir in heavy cream and allow it to simmer for 2-3 minutes until slightly thickened.

            Combine: Reduce heat to low and stir in the grated Parmesan cheese until melted and creamy. Return the shrimp to the skillet and toss everything together. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached. Adjust seasoning with salt, pepper, and lemon juice (if using).

              Add Pasta: Add the drained pasta to the skillet and toss gently to combine everything.

                Serve: Plate the creamy Cajun shrimp pasta and garnish with chopped fresh parsley. Serve immediately with extra Parmesan on the side if desired.
