8 oz (225 g) pasta of choice (fusilli or penne works best)

1 can (15 oz) chickpeas, drained and rinsed

2 tbsp olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 cup (240 ml) vegetable broth

1 cup (240 ml) heavy cream or coconut cream for a vegan option

1/2 cup (120 ml) buffalo sauce (adjust to taste)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

Chopped green onions or chives, for garnish

Crumbled blue cheese or vegan cheese (optional), for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

      Add Chickpeas: Stir in the rinsed chickpeas and cook for another 2-3 minutes, allowing them to warm through and absorb some of the flavors.

        Create the Sauce: Pour in the vegetable broth, heavy cream, and buffalo sauce into the skillet. Stir well to combine and bring the mixture to a gentle simmer. Add garlic powder and onion powder, and season with salt and pepper to taste. Let it simmer for about 5 minutes until the sauce thickens slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the sauce, tossing gently to combine. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.
