Creamy Broccoli White Cheddar Penne

12 oz (340g) penne pasta

2 cups fresh broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 ½ cups shredded white cheddar cheese

½ cup grated Parmesan cheese

1 teaspoon Dijon mustard

½ teaspoon onion powder

Salt and pepper, to taste

Red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli, reserving ½ cup of pasta water for later.

    Sauté Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.

      Make the Sauce: Lower the heat to medium-low, then pour in the heavy cream. Stir in the Dijon mustard, onion powder, salt, and pepper. Allow the mixture to simmer gently for about 3-4 minutes, stirring occasionally.

        Combine Cheeses: Gradually add the white cheddar and Parmesan cheese to the cream mixture, stirring until completely melted and smooth. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.

          Combine Pasta and Sauce: Add the cooked penne and broccoli to the cheese sauce. Toss everything together until the pasta is completely coated with the creamy sauce. Adjust seasoning with more salt, pepper, or red pepper flakes if desired.

            Serve: Spoon the creamy broccoli white cheddar penne into bowls, and garnish with fresh chopped parsley. Enjoy while warm!
