2 cups cooked white or brown rice

3 cups fresh broccoli florets (or frozen, thawed)

1 cup shredded sharp cheddar cheese

1 cup sour cream

1 can (10.5 oz) cream of mushroom soup (or cream of chicken)

1 cup chicken or vegetable broth

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon oregano

½ teaspoon salt (to taste)

½ teaspoon black pepper

½ cup breadcrumbs (optional, for topping)

2 tablespoons melted butter (if using breadcrumbs)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare the Broccoli: If using fresh broccoli, steam the florets for about 3-4 minutes until vibrant green and slightly tender. If using frozen, ensure they are fully thawed and drained.

      Mix the Base: In a large mixing bowl, combine the cooked rice, steamed broccoli, shredded cheddar cheese, sour cream, cream of mushroom soup, chicken or vegetable broth, garlic powder, onion powder, oregano, salt, and black pepper. Mix until all ingredients are well combined and the broccoli is evenly distributed.

        Add to Casserole Dish: Lightly grease a 9x13 inch casserole dish with olive oil. Pour in the rice and broccoli mixture, smoothing the top with a spatula.

          Prepare the Topping (optional): In a small bowl, mix the breadcrumbs with melted butter until they are evenly coated. Sprinkle the breadcrumb mixture over the top of the casserole for a crunchy finish.
