8 oz (225g) pasta of your choice (penne or fusilli works well)

2 cups fresh broccoli florets

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon red pepper flakes (optional, for heat)

1 cup low-sodium vegetable broth

1 cup heavy cream or full-fat coconut milk (for a dairy-free option)

1 cup grated Parmesan cheese (or nutritional yeast for vegan)

Salt and black pepper to taste

Fresh parsley or basil, chopped, for garnish

Zest of 1 lemon (optional, for brightness)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the pot to blanch them. Reserve 1 cup of pasta water, then drain the pasta and broccoli together.

    Sauté Aromatics: In the same pot, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using); sauté for about 1 minute until fragrant, being careful not to burn the garlic.

      Create the Sauce: Lower the heat slightly and pour in the vegetable broth, scraping the bottom of the pot to release any flavor. Stir in the heavy cream and allow it to simmer for 2-3 minutes until slightly thickened.

        Combine Ingredients: Add the drained pasta and broccoli back to the pot. Stir well to combine. If the mixture is too thick, add reserved pasta water, a little at a time, until you reach your desired consistency.

          Add Cheese and Season: Stir in the grated Parmesan cheese (or nutritional yeast) until melted and creamy. Season with salt, pepper, and lemon zest to taste.
