Creamy Broccoli Cheese Soup

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups fresh broccoli florets (about 1 large head)

2 medium carrots, diced

4 cups vegetable or chicken broth

1 cup heavy cream

2 cups sharp cheddar cheese, grated

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: a pinch of red pepper flakes for heat

Fresh parsley for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and continue to sauté for another minute until fragrant.

    Cook Vegetables: Add the broccoli florets and diced carrots to the pot. Sauté for about 5 minutes, stirring occasionally. This will help them soften and develop flavor.

      Add Broth: Pour in the vegetable or chicken broth, making sure all the vegetables are submerged. Bring to a boil, then reduce the heat and let it simmer for about 10-12 minutes, or until the broccoli and carrots are tender.

        Blend the Soup: Remove the pot from heat and, using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest as-is. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender.

          Incorporate Cream & Cheese: Stir in the heavy cream, grated cheddar cheese, and Dijon mustard. Mix well until the cheese is melted and the soup is creamy. If the soup is too thick, add more broth or water to reach your desired consistency.

            Season: Taste the soup and season with salt and pepper. If you'd like a bit of heat, add a pinch of red pepper flakes.

              Serve: Ladle the soup into bowls and garnish with fresh parsley and extra cheese if desired. Serve hot with crusty bread or a side salad for a delightful meal.
