4 cups fresh broccoli florets (about 1 medium head)

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable or chicken broth

2 cups milk (whole or half-and-half for extra creaminess)

2 cups sharp white cheddar cheese, shredded

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a large heavy-bottomed pot, heat the olive oil and butter over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.

    Add the Broccoli: Stir in the fresh broccoli florets and cook for another 3 minutes, allowing them to soften slightly.

      Pour in the Broth: Add the vegetable or chicken broth to the pot, bringing the mixture to a gentle boil. Reduce the heat and let it simmer for about 10-15 minutes, until the broccoli is tender.

        Thicken the Soup: In a small bowl, combine the flour with a bit of the milk to create a slurry. Slowly add the remaining milk to the pot, stirring continuously. Then, pour in the flour mixture while stirring to avoid lumps.

          Blend Until Smooth: Use an immersion blender to purée the soup until smooth. If you prefer a chunkier texture, blend just half of it, leaving some broccoli pieces intact.
