12 oz spaghetti or any pasta of your choice

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves, plus extra for garnish

2 tbsp olive oil

1 tbsp lemon juice (freshly squeezed)

1/2 tsp salt (or to taste)

1/4 tsp black pepper

1/4 cup grated Parmesan cheese (optional)

1/4 cup cherry tomatoes, halved (for garnish)

Crushed red pepper flakes (optional, for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest and set the pasta aside.

    Prepare the Avocado Sauce: In a food processor or blender, combine the ripe avocados, minced garlic, basil leaves, olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy. If it’s too thick, add a bit of the reserved pasta water to achieve your desired consistency.

      Combine: In the pot or a large mixing bowl, combine the drained pasta with the creamy avocado sauce. Toss well to coat all the pasta evenly. If needed, gradually add more pasta water to make the sauce creamier and help it adhere to the pasta.
