1 ripe avocado

1 cup Greek yogurt (plain, preferably whole milk)

2 tablespoons lemon juice (freshly squeezed)

2 tablespoons extra virgin olive oil

1 clove garlic (minced)

1 teaspoon dried oregano

1 teaspoon Dijon mustard

1/2 teaspoon sea salt (adjust to taste)

1/4 teaspoon black pepper (freshly cracked)

2-3 tablespoons water (to thin the dressing, if needed)

Fresh herbs (parsley or dill, for garnish, optional)

Instructions
 

Prepare the Avocado: Cut the ripe avocado in half, remove the pit, and scoop the flesh into a blender or food processor.

    Combine Ingredients: Add the Greek yogurt, lemon juice, olive oil, minced garlic, dried oregano, Dijon mustard, sea salt, and black pepper to the blender with the avocado.

      Blend Until Smooth: Blend the mixture on high speed until creamy and smooth. If the dressing is too thick for your liking, add 1 tablespoon of water at a time until desired consistency is achieved.

        Taste and Adjust: Taste the dressing and adjust seasoning as needed. You may want to add more lemon juice for tang or salt for flavor.
