Creamy Angel Chicken Rice Casserole

2 cups cooked chicken, shredded (rotisserie chicken works great!)

1 cup uncooked long-grain white rice

4 cups low-sodium chicken broth

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, and corn)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 ½ cups shredded sharp cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon black pepper

½ teaspoon salt (adjust to taste)

1 teaspoon paprika (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, bring 4 cups of chicken broth to a boil. Add the uncooked rice, reduce heat to low, cover, and simmer for about 18 minutes, or until the rice is fully cooked and has absorbed all the liquid. Remove from heat and fluff with a fork.

      Sauté Vegetables: In a large skillet over medium heat, add a splash of olive oil and sauté the chopped onion until translucent, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the shredded chicken, sautéed onions and garlic, frozen mixed vegetables, cream of chicken soup, sour cream, cooked rice, garlic powder, onion powder, black pepper, and salt. Mix until well combined.

          Assemble Casserole: Transfer the mixture into a greased 9x13 inch baking dish. Spread evenly in the dish.

            Add Cheese: Sprinkle the shredded sharp cheddar cheese generously on top of the casserole.

              Bake: Cover the baking dish with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. Then, remove the foil and bake an additional 10-15 minutes, or until the cheese is bubbly and lightly golden.

                Garnish and Serve: Remove the casserole from the oven and let it sit for 5 minutes. Sprinkle paprika and chopped parsley on top for an added touch of flavor and color. Serve hot!
