Cream Cheese & Herb Stuffed Mini Peppers

12 mini sweet bell peppers (red, yellow, or orange)

8 oz cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 tbsp fresh chives, finely chopped

2 tbsp fresh parsley, finely chopped

1 tbsp fresh dill, finely chopped

1 clove garlic, minced

1 tsp lemon juice

Salt and pepper, to taste

Olive oil, for drizzling (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Mini Peppers: Slice the mini peppers in half lengthwise and remove the seeds and membranes. Arrange them cut-side up on a baking sheet lined with parchment paper. If desired, drizzle a little olive oil over them for added flavor.

      Make the Filling: In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, grated Parmesan cheese, chopped chives, parsley, dill, minced garlic, lemon juice, salt, and pepper. Mix until well combined and creamy.

          Bake: Place the stuffed mini peppers in the preheated oven and bake for 15-20 minutes, or until the peppers are tender and the filling is slightly golden.
