Ingredients

1 bag (32 oz) frozen tater tots

1 pound breakfast sausage (pork or turkey)

6 large eggs

1 cup whole milk

1 tsp salt

½ tsp black pepper

1 cup shredded cheddar cheese (plus extra for topping)

½ cup crumbled bacon (optional)

½ cup green onions, sliced

½ tsp garlic powder

½ tsp onion powder

Instructions

Preheat the oven: Preheat your oven to 425°F (220°C).

Cook the sausage: In a large skillet, crumble and cook the breakfast sausage over medium heat until browned and fully cooked. Drain the excess fat if necessary and set aside.

Prepare the egg mixture: In a large mixing bowl, whisk together the eggs, whole milk, salt, pepper, garlic powder, and onion powder until well combined.

Layer the casserole: In a 9x13-inch baking dish, spread half of the frozen tater tots evenly across the bottom. Then, add the cooked sausage on top of the tater tots, followed by half of the cheese, crumbled bacon (if using), and green onions.

Pour the egg mixture: Carefully pour the egg mixture over the layers in the baking dish, ensuring an even distribution. Top with the remaining tater tots and then sprinkle with the rest of the cheese.

Bake the casserole: Place the baking dish into the preheated oven and bake for 30-35 minutes, or until the tater tots are golden brown and the egg is set in the center.

Cool and serve: Remove the casserole from the oven and allow it to cool for 5-10 minutes before slicing. Garnish with additional sliced green onions if desired. Serve warm and enjoy!
