2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 lb ground turkey

1 onion, finely chopped

2 cloves garlic, minced

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, chopped

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

½ tsp salt

¼ tsp black pepper

1 cup low-sodium chicken broth

1 cup shredded cheddar cheese (optional for topping)

Fresh cilantro for garnish (optional)

Olive oil for sautéing

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Sweet Potatoes: In a medium-sized pot, bring water to a boil. Add the diced sweet potatoes and simmer for about 8-10 minutes until slightly tender. Drain and set aside.

      Sauté the Aromatics: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and cook until the onion is translucent, about 3-4 minutes.

        Brown the Turkey: Add the ground turkey to the skillet. Cook until browned and cooked through, breaking it apart with a spoon, about 5-7 minutes.

          Add Vegetables and Spices: Stir in the corn and bell pepper, followed by the cumin, smoked paprika, chili powder, salt, and black pepper. Cook for an additional 3-4 minutes until the vegetables are slightly softened.

            Combine Ingredients: Add the drained sweet potatoes and chicken broth to the skillet. Stir everything together and let it simmer for about 5 minutes, allowing flavors to meld and the mixture to thicken slightly.

              Transfer to Bake Dish: Pour the turkey and sweet potato mixture into a greased 9x13 inch baking dish, spreading it out evenly.
