Ingredients

1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 can (14.5 oz) diced tomatoes, undrained

2 cups fresh spinach, roughly chopped

1 package (9 oz) cheese tortellini (fresh or frozen)

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil

Grated Parmesan cheese for serving

Optional: Red pepper flakes for extra heat

Instructions

Cook the Sausage: In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes. Remove excess fat if necessary.

Sauté the Aromatics: Add the diced onion to the pot and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant.

Build the Soup Base: Pour in the chicken broth and add the can of diced tomatoes (with juice). Stir to combine.

Add Seasonings and Simmer: Sprinkle in the dried basil, oregano, salt, and pepper. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 10 minutes to meld the flavors.

Cook the Tortellini: Add the tortellini to the pot and cook according to the package instructions (usually about 3-5 minutes for fresh tortellini or up to 7-10 minutes for frozen).

Add Spinach: Stir in the chopped spinach and allow it to wilt in the hot soup for about 2-3 minutes.

Final Touches: Taste the soup and adjust seasoning if necessary. If you like it spicy, add a pinch of red pepper flakes.

Serve: Ladle the soup into bowls and sprinkle with grated Parmesan cheese. Enjoy warm!
