Cozy Crockpot Turkey Pumpkin Chili

Ingredients
  

1 lb ground turkey

1 can (15 oz) pumpkin puree

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with juice)

1 small onion, diced

3 cloves garlic, minced

2 cups vegetable or chicken broth

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp cinnamon

Salt and pepper to taste

1 cup corn (frozen or canned)

1 bell pepper (any color), diced

1 tbsp olive oil

Optional toppings: sour cream, shredded cheese, green onions, avocado

Instructions
 

Heat olive oil in a skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until it starts to become translucent.

    Add minced garlic, diced bell pepper, and ground turkey to the skillet. Cook until the turkey is no longer pink, about 5-7 minutes.

      Transfer the turkey mixture into the crockpot. Stir in the pumpkin puree, black beans, diced tomatoes, vegetable or chicken broth, corn, chili powder, cumin, smoked paprika, cinnamon, and season with salt and pepper.

        Mix all the ingredients well, ensuring that everything is evenly distributed.

          Cover the crockpot and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the chili is heated through and flavors have melded together.

            Before serving, taste and adjust seasoning if necessary.

              Serve hot, garnished with your choice of toppings such as sour cream, cheese, green onions, or avocado.
