Cowboy Butter Chicken Linguine

1/2 cup unsalted butter (1 stick)

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh cilantro, chopped

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper to taste

For the Chicken:

2 boneless, skinless chicken breasts (about 1 pound)

Salt and pepper to taste

1 tablespoon olive oil

For the Linguine:

12 ounces linguine pasta

1 cup cherry tomatoes, halved

1/2 cup corn (fresh, canned, or frozen)

1/4 cup green onions, chopped

Extra parsley and cilantro for garnish

Prepare the Cowboy Butter: In a small saucepan, melt the unsalted butter over low heat. Once melted, add the minced garlic and sauté for about 1 minute, until fragrant. Stir in the parsley, cilantro, smoked paprika, chili powder, cayenne pepper, Dijon mustard, and lemon juice. Cook for another 2-3 minutes to meld the flavors. Season with salt and pepper to taste. Set aside to cool slightly.

    Cook the Chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side or until thoroughly cooked and golden brown. Remove from the pan and let rest for a few minutes before slicing into strips.

      Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the linguine.

        Combine Ingredients: In the same skillet used for the chicken, add the cooked linguine, cherry tomatoes, corn, and the prepared cowboy butter. Toss everything together over low heat, adding reserved pasta water little by little until you reach your desired consistency.
