For the Cake Layer:

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsweetened cocoa powder

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 large egg

1 cup milk

½ cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

For the Ice Cream Layer:

2 cups heavy cream

1 can (14 oz) sweetened condensed milk

1 ½ cups crushed chocolate sandwich cookies (like Oreos)

1 tsp vanilla extract

For the Toppings:

Additional crushed chocolate sandwich cookies

Whipped cream

Chocolate syrup (optional)

Instructions
 

Prepare the Cake Layer:

    - Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

      - In a large bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well mixed.

        - Add the egg, milk, vegetable oil, and vanilla extract. Mix until smooth.

          - Carefully stir in the boiling water (the batter will be thin).

            - Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

              - Once baked, allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

                Prepare the Ice Cream Layer:

                  - In a large mixing bowl, beat the heavy cream with an electric mixer until stiff peaks form.

                    - In another bowl, combine the sweetened condensed milk and vanilla extract. Gently fold in the whipped cream until combined.

                      - Fold in the crushed chocolate sandwich cookies, being careful not to deflate the whipped cream.

                        - Pour the ice cream mixture over the cooled cake layer (make sure the cake is in a springform pan or a suitable container). Spread evenly and smooth out the top.

                          - Cover with plastic wrap and freeze for at least 4 hours or until firm.

                            Assemble and Serve:

                              - Once the ice cream layer is set, carefully remove the cake from the springform pan. Place on a serving platter.

                                - Top with additional crushed chocolate sandwich cookies, dollops of whipped cream, and a drizzle of chocolate syrup if desired.

                                  - Slice and serve immediately!
