For the cream cheese frosting:

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 tablespoon lemon juice

For the fruit topping:

1 cup strawberries, sliced

1 cup kiwi, peeled and sliced

1 cup blueberries

1 cup mandarin oranges, drained

1 cup banana, sliced

Fresh mint leaves for garnish (optional)

For the glaze (optional):

1/4 cup apricot jam

1 tablespoon water

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Make the Crust: In a mixing bowl, combine the softened butter and granulated sugar. Beat until creamy. Add in the egg and vanilla extract, mixing until well combined. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.

      Shape the Crust: Press the dough into a round pizza pan (about 12 inches) or a large parchment-lined baking sheet, spreading it evenly. Bake for 12-15 minutes or until the edges are lightly golden. Allow the crust to cool completely.

        Prepare the Frosting: While the crust is cooling, in a medium bowl, mix the softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Beat with an electric mixer until smooth and creamy.

          Spread the Frosting: Once the crust is completely cool, spread the cream cheese frosting evenly over the crust using a spatula.

            Add the Fruit: Arrange the sliced strawberries, kiwi, blueberries, mandarin oranges, and banana artfully over the cream cheese frosting in a colorful pattern.
