Cold Sesame Noodles

8 oz flat rice noodles (or spaghetti)

2 tablespoons sesame oil

3 tablespoons smooth peanut butter

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 teaspoon chili garlic sauce (adjust for spice level)

1 small garlic clove, minced

2 green onions, finely chopped

1 cup shredded carrots

1/2 cucumber, julienned

Sesame seeds, for garnish

Fresh cilantro, for garnish (optional)

Instructions
 

Cook the Noodles: In a large pot of boiling water, cook the flat rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside in a large mixing bowl.

    Make the Sauce: In a medium bowl, combine the sesame oil, peanut butter, soy sauce, rice vinegar, honey (or maple syrup), chili garlic sauce, and minced garlic. Whisk together until the mixture is smooth and well blended.

      Toss the Noodles: Pour the sauce over the cold noodles in the mixing bowl. Toss thoroughly to ensure all the noodles are evenly coated in the delicious sesame sauce.

        Add Fresh Ingredients: Add the chopped green onions, shredded carrots, and julienned cucumber to the bowl. Gently toss everything together until the vegetables are mixed in evenly.
