Cold Greek Orzo Salad

Ingredients
  

1 cup orzo pasta

1 cup cucumber, diced

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

½ cup Kalamata olives, pitted and sliced

1 cup feta cheese, crumbled

½ cup bell pepper (red or yellow), diced

¼ cup fresh parsley, chopped

¼ cup fresh mint, chopped

¼ cup extra virgin olive oil

Juice of 1 lemon

1 tablespoon red wine vinegar

Salt and pepper to taste

Instructions
 

Cook the Orzo: Begin by bringing a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prep the Vegetables: While the orzo cools, prepare your vegetables. Dice the cucumber and bell pepper, halve the cherry tomatoes, and finely chop the red onion, parsley, and mint. Also, slice the Kalamata olives.

      Mix the Dressing: In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, salt, and pepper until well combined. Adjust seasoning according to your taste.

        Combine Everything: In a large mixing bowl, combine the cooled orzo, diced cucumber, cherry tomatoes, red onion, Kalamata olives, bell pepper, feta cheese, parsley, and mint.

          Dress the Salad: Pour the dressing over the orzo salad mix. Toss gently to ensure everything is well coated with the dressing without breaking the feta cheese too much.

            Chill Before Serving: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

              Serve: After chilling, give the salad a quick toss and adjust any seasoning if necessary. Serve cold as a refreshing side dish or a light main course.
