8 oz whole wheat pasta (fusilli or penne)

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1/4 red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tbsp red wine vinegar

1 tbsp Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Cook the Pasta: In a large pot of salted boiling water, add the whole wheat pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Drain well and set aside.

    Prepare the Veggies and Chickpeas: In a large mixing bowl, combine the drained chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and Kalamata olives. Stir gently to combine.

      Make the Dressing: In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well mixed. Taste and adjust seasoning as needed.
