Ingredients

1 lb chicken tenderloins

1 cup unsweetened shredded coconut

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

½ tsp salt

½ tsp black pepper

1 tbsp honey (optional for a touch of sweetness)

Cooking spray (for air frying)

Instructions

Prep the Chicken: Start by patting the chicken tenderloins dry with paper towels to remove excess moisture. This helps the coating adhere better.

Set Up Breading Station: In three separate bowls, prepare your breading station.

      - Flour Mixture: In the first bowl, combine the flour with garlic powder, onion powder, paprika, salt, and black pepper. Mix well.

        - Egg Wash: In the second bowl, beat the two large eggs until smooth. You can whisk in honey at this stage if you prefer a touch of sweetness.

          - Coconut Mixture: In the third bowl, combine the shredded coconut and panko breadcrumbs. Mix until evenly combined.

Coat the Chicken: Take each chicken tenderloin and first coat it in the flour mixture, shaking off any excess. Then dip it into the egg wash, allowing any excess to drip off. Finally, roll it in the coconut mixture, pressing lightly to ensure it sticks well. Repeat this process for all the chicken tenders.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.

Arrange Chicken Tenders: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the coated chicken tenders in a single layer in the basket, making sure they do not touch for even cooking. You may need to do this in batches, depending on the size of your air fryer.

Air Fry the Tenders: Air fry the chicken tenders at 400°F (200°C) for 10-12 minutes, flipping halfway through to ensure even browning. They should be golden brown and reach an internal temperature of 165°F (74°C). Add a little more cooking spray to the chicken before flipping for extra crispiness.

Serve and Enjoy: Once done, carefully remove the chicken tenders from the air fryer and let them rest for a couple of minutes before serving. Pair with your favorite dipping sauce, like sweet chili or honey mustard, for an extra kick!
