1 medium onion, diced

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

6 cups low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 cups rotisserie chicken, shredded

2 cups egg noodles

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Juice of 1 lemon (optional)

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery, sautéing until the vegetables are softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
