1 pound baby carrots (or regular carrots, peeled and sliced)

2 tablespoons honey

3 tablespoons fresh orange juice

1 tablespoon fresh lemon juice

1 tablespoon olive oil

Zest of 1 orange

Zest of 1 lemon

Salt and freshly ground black pepper, to taste

2 tablespoons unsalted butter

Fresh parsley or thyme for garnish (optional)

Prepare the Carrots: If using regular carrots, cut them into uniform sticks, about 2 inches long and ½ inch wide. If using baby carrots, simply set them aside.

    Make the Glaze: In a small bowl, whisk together honey, orange juice, lemon juice, olive oil, orange zest, and lemon zest until well combined.

      Cook the Carrots: In a large skillet, melt the butter over medium heat. Once melted, add the carrots and sprinkle with salt and pepper. Sauté the carrots for about 5-7 minutes until they start to soften.

        Add the Glaze: Pour the citrus honey mixture over the carrots. Stir well to coat the carrots evenly. Increase the heat to medium-high and cook for an additional 5-10 minutes, stirring occasionally, until the carrots are tender and the glaze has thickened and caramelized slightly.

          Serve: Remove the skillet from heat. Transfer the glazed carrots to a serving dish. Garnish with chopped fresh parsley or thyme if desired.
