Cinnamon Roll Pancake Stacks

For the Pancakes:

1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

For the Cinnamon Swirl:

2 tablespoons melted butter

1/4 cup brown sugar

1 tablespoon ground cinnamon

For the Cream Cheese Glaze:

4 oz cream cheese, softened

1/2 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Make the Cinnamon Swirl: In a small bowl, mix together the melted butter, brown sugar, and ground cinnamon until you have a smooth paste. Transfer this mixture to a piping bag or a ziplock bag with a corner cut off for easy swirling. Set aside.

    Prepare the Pancake Batter: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined. In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract. Combine the wet ingredients into the dry ingredients and mix until just combined; it’s okay if there are a few lumps.

      Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it. Pour about 1/4 cup of the pancake batter for each pancake onto the skillet. Using your piping bag, immediately swirl the cinnamon mixture on top of the batter in a spiral pattern, then gently use a toothpick or knife to swirl it into the pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter and cinnamon swirl.

        Make the Cream Cheese Glaze: In a medium bowl, combine the softened cream cheese, powdered sugar, milk, and vanilla extract. Mix until smooth and creamy. Adjust the consistency with more milk or powdered sugar as desired.

          Assemble the Stacks: Stack two or three pancakes on a plate, drizzle generously with the cream cheese glaze, and layer extras if desired. Serve warm and enjoy your delicious Cinnamon Roll Pancake Stacks!
