Ingredients

1 loaf of cinnamon raisin bread, cut into cubes

4 large eggs

2 cups of whole milk

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon (plus more for sprinkling)

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup raisins (optional)

1/4 cup chopped pecans or walnuts (optional)

Butter for greasing the baking dish

Maple syrup for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter.

Prepare the Bread: Place the cubes of cinnamon raisin bread evenly in the greased baking dish. If adding, sprinkle the raisins and chopped nuts over the top.

Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and salt until well combined.

Combine: Pour the egg mixture evenly over the bread cubes, making sure all pieces are saturated. Gently press down on the bread to soak up the mixture.

Let it Rest: Cover the baking dish with plastic wrap or foil and let it sit in the refrigerator for at least 30 minutes (or overnight for a richer flavor).

Bake: Remove from the fridge and uncover. Sprinkle a little extra ground cinnamon over the top. Bake in the preheated oven for 35-45 minutes, or until the top is golden brown and the egg mixture is set.

Cool and Serve: Allow the casserole to cool for about 10 minutes before slicing. Serve warm with maple syrup drizzled over the top.
