Ingredients

6 slices of white bread (or whole wheat)

1 medium apple, peeled, cored, and diced

2 tablespoons brown sugar

1 teaspoon cinnamon

2 large eggs

1/4 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

2 tablespoons butter (for cooking)

Powdered sugar (optional, for dusting)

Instructions

Prepare the Apple Mixture: In a medium bowl, combine the diced apple, brown sugar, and cinnamon. Toss until the apples are well coated. Set aside.

Flatten the Bread: Using a rolling pin, flatten each slice of bread to about 1/4 inch thickness. This will help them roll up easily.

Assemble the Roll-Ups: Take a tablespoon of the apple mixture and place it near one edge of a flattened slice of bread. Roll the bread tightly around the apple filling, starting from the edge. Repeat with remaining slices.

Make the Egg Mixture: In a shallow dish, whisk together the eggs, milk, and vanilla extract until well combined.

Dip the Roll-Ups: Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Dip each roll-up into the egg mixture, ensuring they are well-coated but not soaked, then place them seam-side down in the skillet.

Cook the Roll-Ups: Cook for about 2-3 minutes on each side, or until golden brown and slightly crispy. Add more butter as needed for cooking the remaining roll-ups.

Serve: Once cooked, remove from the skillet and place on a plate. Dust with powdered sugar if desired. Serve warm, and enjoy the sweet apple filling and cinnamon goodness!
