Ingredients

For the cake:

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened (plus more for greasing the pan)

1 cup unsweetened applesauce

2 large eggs

1/2 cup milk

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 teaspoon vanilla extract

For the apple layer:

2 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1 tablespoon granulated sugar

For the crumb topping:

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 cup rolled oats

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.

Prepare the Apple Layer: In a medium bowl, toss the diced apples with lemon juice, cinnamon, and sugar. Set aside to let the flavors meld.

Make the Cake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then add the applesauce and vanilla extract, mixing well.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt.

Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture while alternating with the milk. Begin and end with the flour mixture. Stir until just combined; avoid overmixing.

Layer the Batter and Apples: Pour half of the batter into the greased baking dish, spreading it evenly. Layer the diced apple mixture on top, then pour the remaining cake batter over the apples, smoothing it out gently.

Prepare the Crumb Topping: In a medium bowl, combine the flour, brown sugar, rolled oats, ground cinnamon, and salt. Drizzle the melted butter over the dry ingredients, and mix until crumbly.

Add the Crumb Topping: Sprinkle the crumb topping evenly over the batter in the baking dish.

Bake: Place the cake in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Let the cake cool in the baking dish for about 15 minutes before cutting into squares and serving warm or at room temperature.
