Cilantro Lime Grilled Chicken Skewers

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup fresh cilantro, finely chopped

3 tablespoons olive oil

Juice of 2 limes

Zest of 1 lime

3 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

Optional: wooden or metal skewers

Optional: lime wedges and extra cilantro for garnish

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together the chopped cilantro, olive oil, lime juice, lime zest, minced garlic, ground cumin, smoked paprika, salt, and black pepper until well combined.

    Marinate the Chicken: Add the cubed chicken to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap or transfer to a zip-top bag, and refrigerate for at least 1 hour, or overnight for more flavor.

      Soak Skewers (if using wooden skewers): If you are using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.

        Preheat the Grill: Preheat your grill to medium-high heat (about 400°F to 450°F). If you have a grill pan, you can also use this on the stovetop.

          Assemble the Skewers: Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

            Grill the Skewers: Place the skewers on the grill. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The chicken should reach an internal temperature of 165°F.
