Churro Cheesecake Bars Recipe

For the Churro Base:

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1 large egg

1 tablespoon cinnamon sugar (1 tablespoon granulated sugar mixed with 1 teaspoon ground cinnamon)

For the Cheesecake Layer:

12 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1/4 cup sour cream

1 tablespoon all-purpose flour

For Topping:

1 tablespoon butter, melted

2 tablespoons cinnamon sugar

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Make the Churro Base:

      - In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

        - In another bowl, mix the melted butter, vanilla extract, and egg until smooth.

          - Add the wet ingredients to the dry ingredients and stir until just combined.

            - Press the dough evenly into the bottom of the prepared baking pan. It might be slightly crumbly, but that’s okay!

              Bake the Base: Bake the churro base in the preheated oven for about 10-12 minutes, or until it’s just set and lightly golden. Remove from the oven and let it cool slightly.

                Prepare the Cheesecake Layer:

                  - In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

                    - Gradually add the sugar and vanilla extract, mixing well.

                      - Add the eggs one at a time, mixing thoroughly after each addition.

                        - Mix in the sour cream and flour until just combined.

                          Assemble the Bars:

                            - Pour the cheesecake mixture over the cooled churro base, spreading it evenly with a spatula.

                              - Bake in the oven for an additional 25-30 minutes, or until the edges are set and the center is slightly jiggly.

                                Add the Topping:

                                  - While the cheesecake is baking, mix the 2 tablespoons of cinnamon sugar with the melted butter.

                                    - Once the cheesecake layer is baked, remove it from the oven and immediately brush the cinnamon butter topping evenly over the surface.

                                      Cool and Serve: Let the bars cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours, or until completely chilled. Once set, lift the bars out of the pan using the parchment overhang, cut into squares, and serve chilled.
