1 cup dark chocolate (70% cocoa), chopped

3 tablespoons unsalted butter

2 large eggs, separated

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 cup heavy cream

For the Whipped Cream:

1 cup heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

For Assembly:

Instructions
 

Make the Chocolate Mousse:

    - Place the chopped dark chocolate and butter in a heatproof bowl. Melt them together over a pot of simmering water (double boiler method) or microwave in 30-second increments, stirring until smooth.

      - In another bowl, whisk together the egg yolks, half of the sugar, and vanilla extract until pale and creamy. Gradually mix the melted chocolate mixture into the egg yolk mixture until combined.

        - In a clean bowl, whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar and whisk until glossy and stiff peaks form.

          - In a separate bowl, whip the heavy cream until soft peaks form.

            - Gently fold the whipped cream into the chocolate mixture, followed by the egg whites, being careful not to deflate the mixture. Refrigerate for at least 1 hour to set.

              Prepare the Whipped Cream:

                - In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside for assembly.

                  Assemble the Parfait:

                    - In serving glasses or bowls, layer the chocolate mousse, followed by a layer of whipped cream, and a sprinkle of crushed cookies or graham crackers (if using). Repeat the layers until the glasses are full, finishing with whipped cream on top.
