Ingredients

1 cup creamy peanut butter

1 cup rolled oats

½ cup honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon salt

1 cup dark chocolate chips

1 tablespoon coconut oil (optional, for smoother chocolate)

Instructions

Prepare the Base:

    - In a medium-sized bowl, mix together the creamy peanut butter, rolled oats, honey (or maple syrup), vanilla extract, and salt until well combined. The mixture should be thick and sticky.

      Shape the Bars:

        - Line an 8x8-inch (or similar size) baking dish with parchment paper, leaving some overhang on the sides for easy removal.

          - Press the peanut butter mixture firmly into the bottom of the prepared dish, spreading it evenly into the corners. Use a spatula or your hands to ensure it's compact.

            Chill the Base:

              - Place the dish in the refrigerator for about 30 minutes, allowing the mixture to firm up.

                Melt the Chocolate:

                  - While the base is chilling, melt the dark chocolate chips with the coconut oil (if using) in a microwave-safe bowl. Heat in 20-30 second intervals, stirring in between, until the chocolate is fully melted and smooth.

                    Dip the Bars:

                      - Once the peanut butter layer has set, remove it from the baking dish using the parchment overhang and place it on a cutting board. Cut the bars into the desired size (typically, 12-16 squares).

                        - Dip each bar halfway into the melted chocolate, allowing any excess chocolate to drip off. Place the chocolate-dipped bars back onto the parchment paper.

                          Set the Chocolate:

                            - Once all bars are dipped, refrigerate them for another 15-20 minutes until the chocolate is fully set.

                              Serve and Enjoy:

                                - Once the chocolate has hardened, remove the bars from the parchment paper and enjoy! Store any leftovers in an airtight container in the fridge for up to a week.
