1 cup canned pumpkin puree

1/2 cup vegetable oil (or melted coconut oil)

1/2 cup brown sugar, packed

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/2 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans for added crunch

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Wet Ingredients: In a large mixing bowl, combine the pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Mix until smooth and all ingredients are well incorporated.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

        Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few flour streaks are okay.

          Fold in the Chocolate Chips: Gently fold in the chocolate chips (and nuts, if using) until evenly distributed throughout the batter.

            Fill Muffin Tins: Pour the mixture into the prepared muffin tin, filling each cup about 2/3 full to allow for rising.
