Chocolate Cherry Cookies

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup dark chocolate chips

3/4 cup dried cherries, roughly chopped

1/4 cup chopped walnuts (optional)
