24 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

½ cup heavy cream

1 cup dark chocolate, melted and slightly cooled

1 ½ cups cherry pie filling (store-bought or homemade)

¼ cup unsweetened cocoa powder

For the ganache topping:

½ cup heavy cream

4 oz dark chocolate, chopped

Additional cherry pie filling for garnish (optional)

Chocolate shavings for garnish (optional)

Instructions
 

Prepare the crust:

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Bake for 8 minutes, then remove and let it cool slightly.

      Make the cheesecake filling:

        In a large mixing bowl, beat the softened cream cheese with the granulated sugar until smooth and creamy. Add the vanilla extract and mix. Incorporate the eggs one at a time, mixing well after each addition.

          Combine the flavors:
