Chilled Pesto Pasta Cups

Ingredients
  

2 cups fusilli pasta

1 cup fresh basil leaves

¼ cup pine nuts

2 cloves garlic, minced

½ cup Parmesan cheese, grated

½ cup extra-virgin olive oil

1 cup cherry tomatoes, halved

½ cup fresh mozzarella balls, halved

1 teaspoon lemon juice

Salt and pepper, to taste

Fresh basil leaves, for garnish

12 small cups or jars for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Make the Pesto: In a food processor, combine the fresh basil leaves, pine nuts, garlic, Parmesan cheese, and lemon juice. Pulse until the mixture is finely chopped. With the processor running, gradually drizzle in the olive oil until a smooth paste forms. Season with salt and pepper to taste.

      Combine the Ingredients: In a large mixing bowl, toss the cooled pasta with the prepared pesto until the pasta is evenly coated. Gently fold in the halved cherry tomatoes and mozzarella balls.

        Assemble the Cups: Spoon the chilled pesto pasta mixture into the cups or jars, filling each about ¾ full. Top with extra cherry tomatoes, mozzarella balls, and a sprinkle of freshly grated Parmesan cheese.

          Garnish and Chill: Garnish each cup with a fresh basil leaf on top. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
